Kale Konji is a specialty sweet from the Ilam province and one of the most important souvenirs of this region. The main ingredients of this sweet include brown sesame seeds and dates (Zahedi variety). First, the sesame seeds are roasted, and then they are ground with a wooden tool called Chalagh, which is used for grinding Kashk and pounding sesame seeds. The sesame seeds and dates are thoroughly pounded until the sesame releases its oil. This sweet can be stored for months without refrigeration.
