Ab-Goosht (Lamb Shank Soup)

Ab-Goosht, literally translated meat broth (Ab: water, broth, Goosht: Meat), is a hearty, heavy Persian traditional soup. The dish is made of meat broth thickened with chickpeas and white beans, lamb or beef shank, onion, potato, tomatoes and turmeric; all cooked in a ceramic pot. Generally, there are two components to this dish: one is liquid part being a soup or broth, and the other a puree made from the remaining ingredients which is known as Goosht-e Koubideh (mashed meat). Then the dish is served with the occasional side of Persian pickles (Torshi), plate of spring onions, basil, radish and fresh herbs (Sabzi Khordan), and traditional flat bread like Sangak. Since Ab-Goosht has been around for so many years in ancient Persia, you may find differnet varrient to it; however, what remained the same is the way it’s served and consumed.

If Ab-Goosht is cooked in a stone pot, only the name of the food changes to Dizi. Well, some believe Ab-Goosht tastes better in stone pot. We leave it up to you to decide in your trip to Iran
