Gaz is a special pastry from Isfahan, Iran, which is recognized as the intellectual property of "Gaz of Isfahan" by UNESCO. This pastry has been a famous delicacy of Isfahan, particularly during the Safavid era, and was exported to cities and neighboring countries alongside handicrafts and dried fruits during the Qajar period. Its main ingredients include egg whites, cardamom, rosewater, sugar, and pistachios or almonds. High-quality Gaz is traditionally sweetened with the extract and syrup of a special plant called "Angbin."
