Katogh Mahi (Fish Stew) is one of the native foods of Hormoz Island. The main ingredient of this stew is fish. This stew is one of the old ones in Hormozgan, which is cooked today with a few changes. The fish flavors with a variety of aromatic vegetables, garlic, and onions. In the past, women used dried vegetables (due to the weather conditions, the lack of facilities and difficulty in transportation to the islands of Hormozgan province, and the absence or lack of fresh vegetables). Onions and garlic were pounded in special mortars to make stew tasty. And dried lemon was used for seasoning, which is one of the special spices of Iran. A combination of spicy spices that the locals make with their skill will be used. Hormoz Island is one of the pristine islands whose women are very skilled in cooking this Katog (Qatough). This stew is also known as roe, but its style and cooking are different from fish roe in Khuzestan and Bushehr provinces. This stew is also known as Ghalieh, but it’s the way of cooking is different from Ghalieh Mahi in Khuzestan and Bushehr provinces, actually it is specific to Hormoz Island. People eat Katogh Mahi with local bread, which is baked by the women of this area at home, and the local vegetables (Gorga). This dish is very nutritious and suitable for lunch. In traditional Iranian medicine, foods containing garlic are recommended for use in humid environments to prevent diseases caused by moisture. Therefore, such foods are more common in the northern and southern regions of Iran.
How to prepare:
Beat the vegetables with onion and garlic in large mortars.1
2. Pour oil and vegetable in a bowl (frying pan) under the desired temperature until the vegetable juice is drawn and fried
In the meantime, salt the fish and leave it for half an hour to taste. Then wash and dry and set aside.3
4. Add turmeric to vegetables and fry it completely, then put the fish in the vegetables and let the fish juice evaporate completely
5. Put the tomato paste in a corner of the frying pan and add the lemon zest and grilled pepper, then add hot water to the amount that it covers the fish
6. Let it prepares completely with gentle heat. This food should be a little juicy because it is usually served with bread
