Khoresh-e Tareh Koohi or Mountain Leek Stew is a special dish from western Iran, particularly popular in Ilam Province. People in this region believe this beloved stew can be a strong competitor to Ghormeh Sabzi due to significant similarities in composition and color between these two traditional dishes. Skilled chefs and capable women of Ilam use ingredients such as lamb meat, dried fenugreek leaves (or optionally red kidney beans or white beans), animal fat, Tareh (wild leek), tomato paste, onions, salt, pepper, turmeric, and local spices to prepare and cook this local delicacy.
This wild vegetable resembles leek or scallion and produces a very strong smell similar to mustard gas when cooked. It is beneficial in treating many infections of the respiratory system, digestive system, and urinary tract.
